Ujuzi wake wa uchinjaji kuku kwa ubora wa juu umemdumishia soko tangu enzi za Corona
USTAHIMILIVU, ujuzi wa kuchinja na ukwasi wa kutambua hitaji la soko zimekuwa silaha kibindoni iliyomwezesha Douglas Sobera, 34, kubadili changamoto ya janga la Corona kuwa biashara ya mamilioni ya pesa mjini Kisii. Sobera ni mmiliki wa Maa Chicken, buchari inayochinja na kusambaza kuku kwa zaidi ya asilimia 80 ya hoteli kubwa na mikahawa mjini Kisii na viunga vyake. Yeye si mgeni kwenye tasnia ya nyama ya kuku. Alipata uzoefu wa miaka mitano kama mfanyakazi wa Quality Meat Packers (QMP) — kampuni ya kibinafsi humu nchini ya kuchinja na kusaga nyama. Akiishi Kajiado, mwaka 2019 alianzisha mradi mdogo wa kununua kuku kutoka kwa wafugaji na kuwauza kwa QMP. Wakati huo biashara ilikuwa ikinawiri. Lakini mwaka 2020 janga la Covid-19 lilipoteka ulimwengu mzima hoteli nyingi zilifungwa, QMP ikapunguza ununuzi kwa asilimia 70, na Sobero akalia na kuku zaidi ya 400 asijue la kufanya. Baada ya kutafiti soko alirejea nyumbani Kisii mwisho wa 2021. Aliona fursa na akaidandia, kama anavyoeleza: "Wakazi wa Kisii wanapenda sherehe kila wikendi. Hoteli zinajaa, lakini hakuna msambazaji wa kuku aliye na viwango vya ubora kama vya QMP. Niliona pengo na nikaja kulijaza." Februari 2022 alifungua buchari yake ya Maa Chicken katika soko la Marikiti mjini Kisii. Duka hilo liko katika kiingilio cha nyuma cha jumba la Uhuru Plaza ambalo ni maarufu sana katika mji huo. Maa ni jina la Kimaasai. Kwa kuwa Sobera alianza kazi yake ya uuzaji nyama ya kuku katika himaya ya jamii ya Maasai huko Kajiado, aliamua kuita biashara yake jina hilo kama njia ya kuweka kumbukizi alikoanzia. Leo hii Maa Chicken ni kitovu cha kuku Kisii. Mauzo ya wastani ni kuku 100 kwa siku, sawa na kilo 180-200 ambapo bei ni Sh420 kwa kilo. Haya ni mapato ya takriban Sh 75,600 kwa siku au Sh 2.2 milioni kwa mwezi. Maa Chicken huuza aina zote za nyama ya kuku: waliofugwa mahususi kwa nyama yao maarufu broila, ambao huuzia hoteli za bei nafuu; kienyeji walioimarishwa, ambao huuzia wateja wa kati; na kienyeji halisi, ambao huuzia hoteli za kifahari na kwa mteja anayetaka kwa ajili ya kupika kitoweo. Huduma ni kulingana na mteja: kuku mzima, au vipande vyake — paja, mbawa, kidari, maini, firigisi na sehemu zinginezo. Kila kitu hupimwa kutumia mizani ya kidijitali mbele ya mteja. "Hatuuzi kwa kubahatisha. Hoteli ikitaka nyama ya broila isiyo na mfupa kilo 20 saa kumi na mbili asubuhi, ni lazima zifike. Kuchelewa ni kupoteza mteja!"anasisitiza Sobera. Ili kuhakikisha hakosi kuku amejenga ushirikiano na wafugaji zaidi ya 30 wa kudumu kutoka Bonchari, Kitutu Chache, na Nyaribari. Anawalipa kwa bei nzuri papo hapo. "Uaminifu ni mtaji. Mfugaji akijua analipwa leo, hata mvua ikinyesha ataleta kuku," Sobera aongeza. Biashara yake imeajiri vijana 10 moja kwa moja: kuna wachinjaji, wasafirishaji wanaotumia pikipiki ili kufikia wateja chapchap, wauzaji na wasimamizi. Kwa kutumia ujuzi na desturi za ubora za QMP, Maa Chicken imeweka viwango vya juu vya usafi. Kuku huchinjwa na kusafirishwa hadi kwa mteja wakiwa freshi. Wafanyakazi huvalia magwanda na kofia spesheli zinazotumika ndani ya chumba cha kichinjio pekee. Nazo sakafu, meza na vifaa vingine vya matumizi husafishwa kila saa. Ana majokufu makubwa matatu ambayo humsaidia kuhifadhi nyama kwa nyuzi hasi 18 (yaani -18°C) ikisubiri wanunuzi. "Afisa wa afya akipita hapa hawezi kutufungia duka. Ndio maana hoteli za Daraja Mbili, Mwembe, Getare zinatuamini," anadeka Sobera. Kama wafugaji wengine wa kuku Sobera analia kuhusu gharama ya juu ya lishe ambayo imefanya wakuzaji wasizalishe mifugo hao kwa wingi. "Bei ya chakula cha kuku imepanda kwa asilimia 22 mwaka huu na kutupunguzia faida. Barabara duni za mashambani pia ni tatizo wakati wa masika," aliongeza. Sobera analenga kufungua matawi katika miji ya Nyamira na Migori kabla ya 2028, na kuweka bidhaa zake za Maa Chicken kwenye maduka ya jumla. "Corona ilinifukuza Kajiado, lakini Kisii imenipa ufalme. Kijana usiseme hakuna kazi - tafuta ujuzi, tafuta pengo, kisha ingia kwa hatua moja na uendelee kupiga ingine kwa ingine," anahitimisha.
